Good concentration and perhaps a touch of oak, but it is extremely well integrated, such that it is effectively invisible. A lovely, finely focused and yet full of flavour style of Barossa Shiraz. Peter Schell and his team walk this tightrope with seeming ease. Chocolate, bay leaves, coffee grinds, dark berries, cherries and plums. Even a hint of vegemite. Very good length here. The grapes are hand-picked into individual ten-kilogram buckets and then laid out onto separate racks to dry. The length of drying time varies each year and is influenced by a variety of factors including the ripeness of the grape, the ambient heat and humidity and the flavour on tasting. The drying process intensifies the flavours of the grape without losing any of the natural acids present in the grape on picking. The *Baumé of the grape is increased during this process by between 0.5 ° and 1.5 °. Heavily perfumed in forest berries, dark chocolate, alpine herbs and new leather\/mahogany Chesterfield chair kinda thing. It’s succulent in texture, fine and firm in the palate and stretches luxuriously long. All of that perfume translates to flavours, a bit of extra cedar oak seasoning and a touch of sweet-earthiness too.
