Winemaking
Crafted in the Amarone style, this Shiraz is made from hand-picked grapes collected just before flavour ripeness. The grapes are carefully placed into individual 10kg buckets and laid out on racks to dry in a purpose-built, fully insulated shed equipped with high-intensity air fans to aid the drying process. The duration of drying varies annually, influenced by factors such as grape ripeness, ambient temperature, humidity, and flavour development. This drying process intensifies the grape flavours without compromising the natural acids present at picking, increasing the Baumé by between 0.5° and 1.5°. After drying, the grapes are processed into wine.
