Tasting Note

A wine of deep colour, with pleasing aromas of blackcurrant, cedarwood, sage, thyme and petrichor, as if the earth were turned freshly the day before. On the palate there are hints of raspberry at the front along with the to be expected blackcurrant fruits, a fine lengthy tannin finish with elegant structure that stretches the entire palate.

Mid-crimson and sporting some punchy varietal characters of blackberry and blackcurrant pastille along with hints of fine spice, pressed purple flowers, a touch of leaf litter, earth and licorice. It's edging towards medium bodied, has fine, silty tannins and a real snappy morello cherry and red apple acidity that gives the wine a sense of freshness and velocity. Vibrant cabernet … who'd a thunk it?

Winemaking

Fruit was harvested mid March, and the whole (not squished) berries fermented in 2 tonne open fermenters for 30 days, hand plunged twice daily to keep things ticking along at a cool 20 – 22 Celsius. The wine was parted like the Red Sea, and equal portions placed into New D’Aquitaine barrels and seasoned French oak barriques for 22 months.
