Tasting Note

Savoury and expressive, with black fruit at the core. Plum and blackberry lead, layered with subtle notes of sage, clove and earth. The palate is rich and structured, unfolding with dark fruit depth, spice and a touch of liquorice. Fine, integrated tannins carry through to a long, composed finish. Now entering its drinking window, with the balance to evolve over the next two decades.

Viticulture & Winemaking

A dry growing season, marked by low winter and spring rainfall, was balanced by well-timed January rain, supporting vine health and fruit development. Warm days and slightly cooler nights through ripening helped retain freshness while allowing full flavour expression. Fruit was sourced from the Stonegarden Vineyard near Springton, including old vine plantings dating back to the late 19th century, alongside Shiraz from Ebenezer.

Parcels were fermented separately in small stainless-steel fermenters, with some batches using submerged cap techniques and extended time on skins to build colour and structure. Following classification, the wine was matured for 18 months in French oak, combining fine-grain and seasoned hogsheads to integrate tannin, build complexity and support long-term cellaring.
