Viticulture & Winemaking

Montepulciano is a native grape of Italy’s Adriatic coast, now thriving in the high country of Eden Valley, where the altitude and cool climate suit the variety perfectly. Hand-picked and destemmed with 10% whole bunch inclusion, the fruit was cold-soaked for 5 days and naturally fermented over 15. The wine was pressed to 500L French puncheons for 12 months’ maturation, then bottled without fining or filtration.
