Tasting Note

Tinges of green in the glass, light and bright in appearance. Aromatically, it leans more towards washed rind cheese or Brie than your usual pear-drop Chenin—think Granny Smith apples, pears, and a hint of honey. On the palate, it’s zippy and fresh like Riesling, yet rounded and approachable. Green apple, quince, and pear show up first, with a saline line and creamy texture closing the loop. A wine with tension and generosity—bone dry, bright, and savoury.

Viticulture & Winemaking

Two separate batches were handled with distinct maceration treatments: the first crushed and left on skins for 2.5 hours; the second for 3 days to extract texture and character. Both went through wild fermentation, with the juice transferred between tanks for clarity and control. Fermentation occurred naturally with indigenous yeasts.

The wine was aged in seasoned French oak barrels for five months, with regular lees stirring and careful topping. This approach delivered layers of complexity and texture, pushing this Chenin beyond the expected. Bottled on 22 September 2023, it captures the sunny, savoury style the winemaker sought to share.
