This enticing profile is complemented by subtle notes of spice, rich clotted cream, almond-infused marzipan, finely crushed stones, and delicate hints of white florals.

Slinky and supple in the mouth, with a really appealing flow of lemon and stone fruits, dotted with spice and flickers of floral top notes. It has a long, cream-edged finish.

Viticulture & Winemaking

The fruit was hand-picked from Schwarz Vineyards in Bethany. Two parcels were processed separately: one was destemmed and macerated for 15 hours, while the other underwent a shorter 7-hour maceration.

Each parcel was pressed to tank, settled, and racked before undergoing wild fermentation. On day six of fermentation, the wines were transferred to seasoned French oak to complete the process. Regular stirring was employed to build complexity and mouthfeel.
