Tasting Note
PIQ is all about freshness and balance, it brings bright acidity, white florals and fresh lime characters, while the Chardonnay adds texture, soft peach notes and a creamy richness to round everything out. Hints of brioche and a subtle champagne-like quality give the wine extra complexity, with 8.5g/L of sugar creating a fuller, softer palate while still feeling light, crisp and incredibly refreshing.
Perfect for drinking now and dangerously easy to enjoy. Pair it with cheese, fresh seafood, Caesar salad or sashimi with ponzu and citrus.
Winemaking
Harvested in early February 2025, this sparkling is led by Piquepoul with a small supporting cast of white varieties to build complexity and balance. Post fermentation time on lees in stainless steel adds texture and richness, while naturally bright acidity from Piquepoul keeps the wine fresh and energetic.
The Story
Famed spy and femme fatale Mata Hari became in essence what would happen if the early 20th century accidentally invented espionage while trying to put on a slightly risqué dance recital, and then panicked about it.
Born Margaretha Zelle she reinvented herself with the confidence of someone who determined facts to be optional and mystery more marketable to become Mata Hari. In the process convincing half of Europe she was an exotic temple dancer, a dangerous spy – or possibly both – before lunch.
Mata Hari – the Sparkling One continues that playful tradition with a wine designed for freshness, energy and easy enjoyment.
