Bright ruby in colour, with an alluring bouquet of assorted wild berries, red liquorice and a hint of confectionery. The palate is seductive, blending richness and roundness with vibrancy and dexterity. A modern style Barossa Grenache that’s instantly enjoyable but will reward careful cellaring in the medium term.

Hand-harvested and sorted to retain only the best Grenache bunches, the fruit was partially destemmed with up to 25% whole-bunch inclusion. Fermentation took place in small, closed-style egg-shaped fermenters. Following a brief cold soak, the must warmed naturally, with both hand and foot plunging daily to manage extraction and temperature.

After 22 days on skins, the wine was pressed and transferred to large puncheon-sized French oak barrels for a six-month maturation. It was naturally clarified and blended prior to bottling.

The Story

NOTUS, named for the Greek God of the Southerly wind, is crafted from old vine Grenache. As summer fades in the Barossa Valley, the arrival of the cooling southerly signals the final stage of ripening—when this wine comes into its own.

Cellaring Potential

Drinking beautifully now and will continue to develop through to 2032.
